When Birch Owners Greg and Christie Maggi attended California Culinary Academy in San Francisco, they noticed goods in the grocery stores were more vibrant and beautiful than they are in the Midwest. When the husband-and-wife team started Birch in 2012, they vowed to bring that northern California freshness to their St. Louis cuisine.

And the only way to do that was cultivating relationships with growers locally and across the United States. In doing so, Birch provides meals that taste as good as they look for any occasion.

We don’t skimp on the quality of our shrimp and salmon. Our seafood is sourced from two coastal vendors, and we ensure when it’s on your plate it was in the water less than 48 hours prior. And while fish probably doesn’t spring to mind when you think of the word “seasonal,” the truth is seafood is a very seasonal delicacy. Fish have different runs depending on their location and climate, which impacts taste. We source in-season seafood to provide an unforgettable dining experience.

Our pastry chefs boast an array of meticulously crafted items, ranging from delicate French pastries, rich and flaky croissants, to cakes and tarts that are not only a feast for the taste buds but also a visual spectacle. Each creation is a testament to their commitment to quality and innovation, using only the finest, ingredients.

Our meats are sourced from all over the country — including upstate New York — from small, independent, artisanal makers. Our pasture-raised poultry, beef, lamb, veal and pork come from small farms we’ve developed longstanding relationships with. For galas and large catering events, we have had meats shipped overnight to ensure the freshest results possible. The dedication to detail keeps Birch a cut above.

We take the same approach to fruits and vegetables, working hard to locate the freshest and most in-season bounty we can. We understand our customers still want strawberries and apples during the winter months, so we ship them in from a warmer climate to produce better results. Several of our fruits and vegetables come courtesy of relationships with local farmers, including our ripe tomatoes.
